Elderflower Infused Honey

This spring we have been gifted with our first decent bloom of elderflowers, inspiring us to  make some delicious infused honey.  Elderflower has been traditionally used for centuries as medicine to help with common colds, sinusitis and hayfever just to name a few. We love honey so why not make it with a twist, enriching flavours and boosting the immune enhancing properties.

What you will need:

330ml Jar (you can use whatever size jar you have)

Enough fresh elderflowers to lightly fill jar

300ml honey (or enough to fill your jar size)

Directions:

  • Harvest flowers and rinse with water
  • Remove flowers from stems and branches
  • Loosely pack your jar with the beautiful white flowers
  • Pour honey into the jar over the flowers, filling to the brim.
  • You can use a chopstick to mixed and immerse the flowers into the honey, releasing any air that may be trapped
  • Secure your jar with the lid or a beeswax wrap
  • Let it solar infuse for a week on a window sill
  • Strain the honey into another clean jar with a lid
  • Store in a cool dark place and use within a few months

Use the infused honey as you would usually. We love using it to sweeten our tea, making salad dressings,  making desserts and medicinally to help relieve sore throats and coughs.
